Moving Forward Together

The Joy of Cooking!

As you all know Andrew and I live in the country. 30 min away from the closest thing to civilization and over an hour to the big city it is easy to find yourself in need of something to do. I love art, movies and other hobbies but Andrew and I have really taken to cooking. For a newly wed couple (can we still call ourselves that at 1 year and a half?) we have an insane collection of cook books. We love trying out new recipes, morphing the ingredients and making it our own. Above all we love doing it on a budget!

One of our latest find was a cook book called “Ten Dollar Dinners” by Melissa d’Arabian star of the hit cooking show Ten Dollar Dinners on the Food Network. This book is honestly amazing and a must have for any kitchen. It teaches you how to develop a cheap but useful pantry, how to create amazing dinners from appetizer to dessert and all for $10!

Tonight was a quick and easy meal that was sooooooo good. I mean yes I made it… but I promise I am not being biased. We had Crispy Chicken a L’Orange, Rice, Easy Peasy Frozen Peas with Strawberry Pavlovas with Apricot Sauce for dessert!

Once the Rice is on the stove the rest is rather straight forward!

For the chicken, use skin on bone in chicken. add salt and pepper to a frying pan that holds 1 tablespoon of oil. Place the chicken skin down and let it get nice and crispy! Next time I am going to wait alittle longer for the perfect crispy skin.  While its plugging away combine 1/2 cup thawed orange juice concentrate and 1/4 cup of honey and bring it to a boil for about 5 min. By the time it is finished its ready to take the chicken out and throw it in the oven at 375. Before you do drizzle some of the orange sauce over the chicken and wait to enjoy! It takes about 25min to bake.

For the Easy Peasy Peas take 1 tablespoon of vegetable oil, some salt, pepper, lemon zest and some lemon juice then add the peas! heat for 5 min and they are ready to go!

For dessert we had Strawberry Pavlovas with Apricot Sauce. These light and fluffy desserts are named after the famous ballerina Anna Pavlova. Not sure why but they tasted great! The base is your basic meringue that is baked for 40min then cooled for 20min. We topped it with whip cream, strawberries and then drizzled with apricot sauce (apricot jam with 2 tablespoons of hot water.. easy eh!!!).  It was great!

I can’t wait till Thursday when we try out afew more.

Summer 2012

Wow, It is hard to believe that summer has come and gone. God has done some truly amazing things this year at Lone Prairie Camp and it has been such a blessing to be a part of them! It was an honor to be part of such an amazing staff this summer as they took time to feed into the lives of those who attended. It was so exciting to learn that there were 15 campers who came to know Christ this summer and even 1 Baptism! Isnt God just so good!at LPC!

This summer we had some very special guests! First Oma and Opa joined us as our first official house guests since moving to camp! It was so great to have them join us for afew days as they were able to experience camp and learn about what it is we do every day. While they were in town they brought Josh Dreger. Andrews cousin, who was able to join us for 2 weeks of camp this year! It was so great having family around!

Throughout the August Long Weekend we were not only blessed to host the many families that attended Family Camp 2012 but it was a true blessing to have had George and Joyce McEachern (My parents) join us for their first experience at LPC! It means so much to have their support as we serve here at Lone Prairie!

The summer finished with a rise in campers, an increase in faith decisions and a hope that seems to be quite unshakable! It is so nice to see our community so excited about what God is doing out at Lone Prairie Camp!

This fall Andrew will be continuing his studies while volunteering as the Senior High Youth Leader at Ellerslie Road Baptist Church! It is so great to be home!

2 days till IGNITE!!!!

The Bergsmas

This past week we had the pleasure of celebrating a true milestone. Syd and Leanne Bergsma Celebrated 21 years of ministry at Ellerslie Road Baptist Church. It was inspiring to hear the stories and watch as past youth were reunited with their leader. People from all over the world sent messages about their current ministries and how this amazing couple played such a role in shaping their relationship with God. Andrew and I can’t help but be amazed by how the couple serves together. Throughout the night stories were shared about their different talents and how with those distinct differences they come together and serve God as an amazing team. This evening helped both Andrew and I as we reflect on our own lives, focus on our own skills and attempt to discern how we may best compliment each other. Congratulations again Syd and Leanne! You two are truely Amazing!!!

As the week continues, Andrew and I have a lot to look forward to. Again we are just about to head off to Bible study where there are about 18 consistent youth joining us to discuss the Bible, their questions and the book  “The stranger on the road to Emmaus”. Please keep us in our prayers as we launch into discussing the trinity, attonement, and the story of Cain and Able this evening!

Tomorrow Night is going to be something special! After a day of getting lots done we get to see some very special friends of mine, Danny and Michelle MacGibbon! We haven’t had the opportunity to see them since the wedding and though the time will be short, during their layover in Edmonton, it is going to be AMAZING!!!

Counting down the hours till we get to see them!!!Then we hit the weekend. Ignite weekend. One all youth love as it is filled with passion, challenges, and new experiences as they explore their faith! This year Starfield will be joining the team as the worship band! Can’t Wait!!!!

We will be sure to fill you in on the details next week!!!

The Change of Seasons

Our Home

Most people know Camp as this amazingly beautiful place during the summer. They occasionally have experienced itduring winter but rarely have the opportunity to see Gods hand at work throughout the Fall. It is amazing to watch as the leaves change from green to gold, deep reds, and brilliant oranges. It is evident that change is most definitely in the air!

Two weeks ago Andrew and I had the opportunity to take our first official class together. While I was still auditing the class we enjoyed the chance to learn and grow together. The class we took was a modular session that had been put together by Acts Seminary and was presented by The Journey, our local chapter. We were challenged in many topics revolvingaround counseling. From marriage counseling to the difficulties of counseling children we learned a great deal and were challenged every step of the way. Andrew and I are now certified to run pre marital classes through prepare and enrich! Last Monday was my last working at Block Buster. As many of you know the stores across Canada have closed as of October 1st. Since then I have started working at the local video store. It is a family owned business with an amazing history and Christian heritage! It is a pleasure to be working with them!

This past weekend Andrew and I had another amazing opportunity to learn. As representatives of Lone Prairie Camp we were blessed with the opportunity to attend the Global Leadership Summit Canada held at Ellerslie Road Baptist Church here in Edmonton. We had the opportunity to hear from the for most leaders of the world. We learned about building strong leadership teams, challenging peoples beliefs, working hard, and serving allwho are around us!  It was an amazing conference!

Finally this fall Andrew and I have joined the ranks of the Sr High youth ministry at Ellerslie Road Baptist church as youth sponsors and Wednesday night bible study leaders. We are going through A stranger on the road to Emmaus by John R. Cross. It is our desire to walk through the book and challenge the perceptions of the teens as they think through the rich and challenging history of Christianity From Genesis to Revelations!

The Taste Of Fall

ESO 2011

September is here and with it has come many great and wonderful things. To start of the beginning of the school year Andrew and I  went to take in Symphony Under the Sky! It was so great to the Edmonton Symphony Orchestra perform in Hawrelak Park! We took in the Friday night performance featuring arrangements by such musicians as Mozart, Handel &  Brahms! The weather was beautiful and the music was fantastic!

Seeing as we are now living in Ferintosh we are very excited about touring the town and getting use to the local area.

Dinner @ The Lucky Dragon

Right now we are challenging ourselves by attempting to try out the many different restaurants. Camrose is filled with many different restaurants with a wide variety of different styles!  The first stop on our tour was at the Lucky Dragon! The Lucky Dragon is a wonderful buffet style Chinese restaurant with a wide variety of flavors. One of our favorite dishes included the ginger chicken! We can’t wait to see what is next on our restaurant tour. Perhaps a stop at  the dough boy??? I mean who wouldnt enjoy pizza from a restaurant called The Dough Boy!

Symphony Under The Sky Fall 2011

Last weekend Andrew and I celebrated my 26th birthday and boy was it a weekend to remember! The weekend started out with an amazing kick off to the Sr High youth group at Ellerslie Road Baptist Church. Andrew and I are happy to be sponsoring! A big thanks to Zackary Aubert for all of his great planning! Minute to win it was such a success!!!

On Saturday, Andrew and I went out on a date and enjoyed dinner at East side Marios! It was amazing. The food was great! We absolutely loved our dishes. I had the butternut squash ravioli while Andrew enjoyed a colourful display of four cheese ravioli!  Following our amazing and romantic dinner we went to our local theater, The Duggan Theater, to see Contagion. The movie was great, a little unconventional but very well done!

Sunday was another day full of many great and wonderful things! Maximus enjoyed his first car ride! We took the camp truck with Maximus in the bed of it to Edmonton so that all the staff could be together! The staff loved getting to see him and boy did he love all the attention. It was so great to celebrate the end of the summer and beginning of the school year with such amazing kids! Camp just isnt the same without them.

Following staff appreciation we headed over to The Dregers for another birthday celebration. It was so great to spend time with the family, the food was amazing, and we enjoyed lively discussions over a warm and very enjoyable campfire!

We look forward to seeing what the rest of the fall holds!

Summer Wrap Up and Settling In

LPC Staff 2011

Well the summer season at Lone Prairie Camp has come to a close. It was filled with many great memories and we were honored to be a part of it. The staff this summer was amazing! We are sad to see them go but can’t wait to see them again soon!

Emma & Anna doing an amazing job painting murals!

The summer wrapped up with the traditional summer clean up. A big thanks to all who were involved. We are looking forward to showing off the new additions to the Darren (craft shop). The evening ended with a wonderful wrap up celebration at Boston Pizza! It was great to share a few more laughs before we all went our separate ways.

Maximus @ 10 weeks

Andrew and I spent the last week preparing for the next group who have headed out to camp. The Hunters will be with us until the end of October. This will be the first fall Andrew and I will be spending out at camp. We are looking forward to seeing the leaves change and adjusting to life in our own little corner of the world!

Be sure to check out the album of Maximus! He is growing like a weed!
